Runner's Kitchen: Ryan’s Vegan Pizza

Ryan is making a vegan sausage, pepper and mushroom pizza, and a vegan tomato pie with his homemade Parmesan.

We love Hannaford’s multigrain pizza dough and pizza sauce. Then we use a vegan sausage, such as Tofurkey, plus yummy veggies that are first sautéed in olive oil, garlic powder, Italian seasoning, salt and pepper. Ryan crumbles the vegan sausage into a frying pan and fries with olive oil until browned.  After frying the peppers, he adds baby portobello mushrooms. Then he places the sauce on the pizza adds the cooked ingredients and then sprinkles with vegan parmesan cheese he has made.

How to Make Vegan Parmesan Cheese:

1/2 C. Raw Cashews

1/2 tsp. Salt

1/2 tsp. Nutritional Yeast

1/4 tsp. Garlic powder

1/8 tsp. Onion powder

1/8 tsp. Italian Seasoning

A pinch of Cumin

Pepper to taste (I use fresh ground black)

Add all ingredients to a blender and pulse until coarse texture but stop before "caking" begins.
Sprinkle to any dish and enjoy!
